Sicilia Grillo Kados 2022

Kados is one of the great white wines produced by Duca di Salaparuta with traditional grape varieties. It is a tasty and intense white, with a round and at the same time refreshing taste, perfect for pairing with important fish dishes. It is produced with 100% Grillo grapes from the Risignolo estate in the municipality of Salemi at an altitude of 300 meters. The clayey limestone soil and the warm and dry climate are the basis of an elegant and supple wine, appreciated by the most demanding palates.

The harvest is manual in the first half of September and is carried out in the early hours of the morning to bring fresh grapes to the cellars and avoid the oxidative effect of the heat that develops during the day. The grapes are further selected in the cellar and pressed. The must ferments in small oak barrels at a low temperature. Subsequently the wine ages in barrique in contact with its lees for a few months before being bottled.
