Sicilia Bianco Anthìlia 2022
Since 1983 Donnafugata has been producing Anthilia white wine with grapes of the Sicilian Catarratto variety. It has become Donnafugata's most identifying and popular label, marking the new course of Sicilian enology. Catarratto is the most cultivated grape in Sicily and is widespread above all in the provinces of Trapani, Palermo and Agrigento. It is a vine variety that grows well in the internal hills of the island, retaining a good level of organic acids and developing fruity flavors. The grapes for Anthilia wine come from the township of Contessa Entellina and surrounding areas. The vineyards are located on hills between 200 and 400 meters above sea level, where in summer the diurnal temperature range favors the accumulation of aromatic compounds in the grape skin.
The harvest took place in the first week of September. The grapes are gently pressed. The free run must after appropriate clarification ferments in stainless steel vats at a controlled temperature of 14-16 ° C. Subsequently the wine ages for two months in the same steel vats without carrying out the malolactic fermentation.
