Sangue di Giuda Frizzante Dolce
During the vinification of the sparkling Sangue di Giuda, the destemmed grapes are placed in steel fermenters, where cold maceration is conducted for about three days at a maximum temperature of 15°C. This process is essential to preserve the fragrant aroma of the grapes.
Subsequently, a partial refermentation of the wine in autoclaves takes place, which gives Sangue di Giuda its typical sweet and sparkling character. The grapes used to produce this wine are Croatina, Barbera and Uva Rara, resulting in a beautiful deep ruby red colour and an intense aroma of ripe red fruit.
On the palate, Sangue di Giuda DOC Frizzante is sweet, enveloping, soft and slightly tannic. This wine pairs perfectly with fruit tarts, dry pastries and piquant cheeses.
