Prosecco Brut Rosé Pink Gold 2023
The bottle is covered with a thin pink metallic coating that makes it shiny; it already communicates at the first impression the particular character of this rosé Prosecco. It is in fact the new type of the Prosecco appellation, which involves the addition of Pinot Noir wine obtained by macerating on the skins. This brings color, but also body and fullness. Prosecco Bottega Pink Gold lends itself to accompanying meals as well as to animate a party. The grapes of both varieties, Glera and Prosecco, are grown in the DOC Prosecco hills between Veneto and Friuli-Venezia Giulia, an area that enjoys a mild climate and has a predominantly alluvial soil, rich in clay and minerals. The selection of the grapes is rigorous and they are harvested at full ripeness separately by variety.
The grapes are processed separately by variety immediately upon arrival in the cellar. The Glera grapes are de-stemmed and gently pressed to obtain a pure liquid must which is left to clarify. It then ferments in stainless steel vats at a controlled temperature with selected yeasts. After destemming, the Pinot Noir grapes are left to cold macerate for 12-16 hours to extract the color from the skins but not the tannins. They are then pressed and fermented without skins in steel vats. The two base wines are blended in the right proportions and the second fermentation takes place in an autoclave. The sparkling wine ages for at least two months in contact with the yeasts before being bottled and dosed with 10 g / l of sugar.
