Pinot Gris is a grape variety that requires careful vinification to best express its aromatic characteristics. The grapes are usually harvested in September. The harvested fruit is introduced into a pneumatic press where the juice is slowly extracted and then sent to a stainless steel tank. The most important phase then begins: fermentation. This breakdown of sugars into alcohol, carried out by the natural yeasts contained in the grapes, takes place over a few months. The wine thus obtained is then matured on the fine lees until bottling.
