Onìris rosa 2021

The pink version of the Onìris wine makes its debut with the 2019 harvest, a new label by Duca di Salaparuta designed for an aperitif and for any delicious occasion. It is a lively and joyful wine from every point of view. It comes from the vineyards located on the coast of central Sicily starting from typical Sicilian vine varieties grown on calcareous soil.

The grapes are harvested by hand starting from mid-September, according to the grape variety. In the cellar they are subjected to a cryomaceration to facilitate the extraction of color. After which they are softly pressed and the must ferments in stainless steel vats without skins at a controlled temperature, as if it were a white. Finally, the wine ages for over a month in steel in contact with its own lees.
