Moscato di Pantelleria Kabir 2022
The name Kabir derives from the Arabic and means "the great one"; the reference is the scent of this sweet DOC wine. It is produced with freshly picked Moscato di Alessandria grapes, also called Zibibbo, grown on the island of Pantellaria. Moscato di Alessandria is a strongly aromatic Mediterranean vine variety, belonging to the family of Moscato. In Pantelleria, the vines are bush trained and are planted in holes in the ground to be protected from the strong winds that blow over the island. In addition, the island's soil is of volcanic origin, not very fertile but rich in minerals and gives a particular character to the wines. Moscato di Pantelleria Kabir has intense and appealing aromas and it manifests a not excessive sweetness on the palate, perfectly balanced by salinity. This makes it ideal paired with goat cheeses, marinated anchovies, smoked fish and not only with fruit desserts.
The harvest is long throughout the month of August, as the grapes are harvested when perfectly ripe according to the altitude and exposure of the vineyard. The grapes are selected and pressed. The free-run must ferments in steel vats at a controlled temperature. Fermentation is interrupted leaving 100 g / l of natural residual sugar. The wine rests in steel for two months before being bottled.
