The Jas de Vignes rosé Ravoire is a highly appreciated rosé wine produced by the Ravoire cellar, a winery with a long tradition in both the Rhone Valley and Provence. It originates in the Alpes de Haute-Provence, a region that offers a unique and ideal terroir for the production of fresh and aromatic rosé wines. It is mainly produced from Syrah grapes, but other varieties are often added to enrich its aromatic profile. Harvesting is done manually in the early morning hours to preserve the freshness of the grapes and limit oxidation. The grapes are gently pressed to extract the pink must, which is the richest part in aroma and colour. Longer, more intense pressing would produce a darker, more tannic wine, whereas a short, gentle pressing such as that used for Jas de Vignes produces a fresh, fruity rosé. The must is fermented at low temperatures in stainless steel tanks. This technique allows the fruity and floral aromas of the grapes to be preserved. After fermentation, the wine is left to mature for a few months on fine lees to acquire more complexity and structure. Finally, the wine is bottled and left to rest in the bottle for a short period before being put on the market.
