Michel Fonnè's Gewürztraminer Tradition is an aromatic and complex white wine, characteristic of Alto Adige, an Italian wine region known for its production The harvest is carried out manually or with sorting machines to ensure that only healthy and ripe grapes are picked. The choice of the ideal harvest time is crucial in order to achieve the right balance of sugars, acidity and aromas.   The grapes are destemmed and gently crushed to avoid damaging the skins and excessively releasing tannins. The must obtained from destemming is transferred to steel vats or large wooden barrels for alcoholic fermentation. The temperature is carefully controlled to preserve the delicate aromas of the Gewürztraminer. Depending on the style of wine to be made, maceration on the skins can be carried out for a longer or shorter period. This technique allows additional aromas and structure to be extracted. Once the wine is ready, it is bottled and left to rest in the bottle for a variable period before being marketed.
