Duca Nero Extra Brut 2022
Duca Nero is an elegant sparkling wine produced on the Vajasindi estate on the northern side of Etna, where, in addition to the native vine varieties, Duca di Salaparuta also grows Pinot Noir. The predisposition of Pinot Noir for sparkling wine is well known, just look at the wines of Champagne or those of Oltrepò Pavese. But in the Vajasindi estate, Pinot Noir grows on volcanic soil rich in mineral elements. This gives a particular charm to the wine in terms of aroma and flavor.
The grapes are harvested in advance by the end of August to have the maximum acidity. The whole bunches are softly pressed to extract a very pure must. This ferments without skins at a controlled temperature in stainless steel vats. It is then added with sugars and yeasts for the second fermentation in a pressurized tank according to the tank method. The sparkling wine ages on the lees in the autoclave for over 6 months in order to acquire depth and complexity.
