Corbières Blason d’Aussières 2020
The Domaine d'Aussières is a historic and very extensive estate within the Corbières AOC appellation in southern France. The Blason d'Aussières red wine is warm and structured, with a fruity and typically Mediterranean taste. The vines live in a mild and sunny climate, influenced by the proximity of the sea, and sink their roots in a shallow soil formed of sand and rock. The grape yields are very low in favor of quality. The richness of taste is given by the 4 grape varieties that make up the blend of this red wine: Syrah gives the wine color, spicy aromas and important structure, Grenache brings roundness and fruity notes, Carignan brings tannins and acidity, as well as Mourvèdre with aromas also of black fruit.
The grapes ferment in steel vats at a controlled temperature with a maceration of about two weeks. After racking, the wine undergoes malolactic fermentation. Only 20% of the wine ages in barrique for one year.
