    Contessa Entellina Chardonnay La Fuga 2022

    Chardonnay La Fuga has been produced by Donnafugata since 1994 and has become popular for images of the night harvest. In fact, the harvest takes place at dawn, before the sun can warm the grapes, in order to take them to the cellar while still cool so as to preserve its fresher aromas. Although it has settled in many areas of the world with the most diverse climates, Chardonnay grape variety is native to a cool area such as Burgundy and in Burgundy it gives its best. The expedient of Donnafugata's nocturnal harvest aims to avoid the effect of the Mediterranean sun on the bunches of grapes that have just been harvested. The vineyards are located on the Contessa Entellina estate between 200 and 300 meters above sea level on clayey soils also rich in limestone.

    The harvest takes place in August at the first light of dawn. The grapes are immediately pressed and the must ferments in stainless steel vats at a controlled temperature of 15-16 ° C. The wine ages for 5 months in steel on the fine lees.
