Contessa Entellina Chardonnay Chiarandà 2021
Chiarandà is an elegant wine, a Sicilian interpretation of a vine variety now considered international, such as Chadonnay. In fact, despite coming from Burgundy, in the north of France, Chardonnay has spread all over the world with the ability to settle in the most disparate climates. In the center of Sicily, on hills between 200 and 300 meters above sea level, the vines of this wine are cultivated on a clayey soil, partly calcareous and containing minerals. The ripening is quite early in this southern latitude and in fact the harvest takes place already at the beginning of August and the Chardonnay develops its riper fruity flavors and its proverbial softness. An oak aging, albeit of measure, further enriches the wine, endowing it with great harmony.
The grapes are harvested by hand in boxes with very low yields. They are carefully selected and the best are pressed. The must ferments in thermoregulated stainless steel vats at a constant temperature of 16-17 ° C. Finally, the wine ages in contact with the fine lees for 8 months in new and used barriques (65% of the wine) and in concrete vats (35% of the wine). Then it is aged for 16 months in the bottle.
