Cantina Boroli's objective is to produce an elegant and refined Chardonnay that best expresses the characteristics of the Langhe terroir. The winemaking techniques used result in a wine with a perfect balance of freshness, structure and complexity. The bunches of grapes are carefully selected by hand to guarantee only the best grapes. Harvesting takes place at the precise moment when the grapes have reached the perfect balance between sugars and acidity. The grapes are gently pressed to extract the must flower, the noblest part of the grape juice. The must is left to settle to allow the coarse lees to settle to the bottom. Alcoholic fermentation takes place in temperature-controlled stainless steel to preserve the fruity and floral aromas of the Chardonnay.  Part of the wine is matured in oak barrels for a few months to acquire complexity and spicy notes. The wines from different vats are blended to obtain a balanced and harmonious end product. The wine is bottled and left to rest in the bottle for a few months before release.
