Champagne Extra Brut Rosé Première Cuvée
Despite being mainly produced from Pinot Noir grapes from the Montagne de Reims, this rosé Champagne maintains a character of gracefulness and elegance typical of the Bruno Paillard style. It is a delicate and refined rosé Champagne, one of a kind. The Bruno Paillard maison works with organic farming and adopts the Solera method for the conservation of vin de resèrve, that is, it has been aging a perpetual wine in the cellar for 25 years, fed every year with part of the young wine from the last harvest. At the sip this Champagne Rosé transmits an incredible energy but does not give the sense of heaviness. This is the reason for its charm and also for its success.
Pinot Noir grapes are vinified in two ways. A part is gently pressed and immediately fermented without contact with the skins to produce a white base wine. A part, on the other hand, is fermented with prolonged maceration on the skins. At the time of creation of the cuvée both Pinot Noir wines and part of Chardonnay are used. Not only of the current vintage but also wines stored in the cellar with the perpetual method are used in large part. After the second fermentation in the bottle, the Champagne matures in contact with the lees for at least three years. Finally, it is dosed with 5.5 g / l of sugar.
