Champagne Extra Brut Grand Cru Blanc de Blancs
Not just a Blanc de Blancs, but a Grand Cru Blanc de Blancs, produced with the very personal style of Bruno Paillard who seeks complexity and lightness in each of his labels. In this case only Chardonnay is used and only from Grand Cru villages of the Côte des Blancs, in particular Oger and Le-Mesnil above all. The use of wood gives body and roundness to a Champagne that remains fresh and subtle, perfectly balanced and for this reason immediately enjoyable. Moreover it has a reduced fizziness compared to other Champagne. Like all the Champagne of Bruno Paillard it has a low dosage, so as not to hide the purity of the taste of the territory.
The hand-harvested grapes in 36 different plots of the Côte des Blancs are gently pressed. The alcoholic fermentation of the base wines takes place partly in steel and partly in wooden barrels. All base wines also carry out malolactic fermentation. At the time of assembling the cuvée, 40% of perpetual wine stored in the cellar is added, therefore not wines from single previous vintages, but a wine aged with the Solera method, which contains base wines from 25 consecutive vintages. The second fermentation takes place in the bottle according to the classic method with an addition of sugars such as to develop a lower atmospheric pressure in the bottle (4.5 atmospheres). The Champagne matures for 48 months on the lees and is finally dosed with 5 g / l of sugar.
