    Champagne Brut Nature Ayala

    Brut Nature, or undosed Champagne, is almost a mission for the Ayala house. It was in fact the first house to lower the dosage of Champagne to satisfy the requests of the Prince of Wales already shortly after its foundation and was among the first to launch non-dosed Champagne on the market. The pure, dry and essential style is a prerogative of Chamapgne Ayala. To get complexity, particular attention is paid to using only perfectly ripe and high-quality grapes, coming from suitable areas. In addition, the grapes come from plots in all the territories of Champagne: Montagne de Reims, Côte de Blancs, Aube, Vallée de la Marne. The prevalence of Chardonnay is an obligatory choice for Ayala that wants to distinguish itself for the finesse of its products, but significant percentages of Pinot noir and Pinot meunier guarantee the right balance in terms of body and roundness.

    Each parcel is vinified separately. The grapes are pressed and the free-run must ferments in steel vats at a controlled temperature, also carrying out the malolactic fermentation. Finally the cuvée is created and with the addition of yeasts and sugars the wine carries out the second fermentation in the bottle according to traditional method. Aging on the lees in the bottle is at least 4 years.

    Suggestions

    To be served in tulip-shaped flutes. You can pair it with raw or cooked seafood, it will be excellent with sashimi.
