Champagne Brut Majeur Ayala
Brut Majeur label represents the basic cuvée of the Ayala maison and embodies its style, based on freshness, finesse and a low dosage. It is ideal as an aperitif or as a toast between meals. The winery is located in Aÿ on the border between the Montagne de Reims and the Côte des Blancs, but the grapes of this Champagne come from vineyards scattered throughout the region and each parcel is vinified separately to have great freedom of maneuver in the realization of the blend.
Balance and precision are the guiding principles of Ayala's Champagne Brut Majeur, which can be complex despite being so easy to drink. The harvest is always manual in the 70 vineyards from which the grapes come. Upon arrival in the cellar, the grapes are gently pressed, the must is clarified and fermented in stainless steel at a controlled temperature. At the time of creating the blend, vin de réserve from previous vintages are also used. The second fermentation takes place in the bottle according to traditional method and the champagne ages on the lees for 36 months. Finally, it is dosed with only 7 g / l of sugar.
