Canasta Cream Sherry Williams & Humbert

Canasta is a sweet and evolved fortified wine, produced as an Oloroso Sherry with the addition of Pedro Ximénez dried grapes. Sherry is a traditional Spanish wine, made in Andalusia, usually dry, but the Cream version is sweet and involves the use of Pedro Ximénez dried grapes with a high concentration of sugars. The production area is limited to the locations of Jerez de la Frontera, Sanlúcar de Barrameda and Puerto Santa Maria, in southern Spain, overlooking the Atlantic Ocean. The base wine is obtained from the white grapes of Palomino (fresh) and Pedro Ximénez (dried); at the end of fermentation there is a sweet wine which is fortified with the addition of spirit until it reaches 19.5% alcohol. Subsequently, the fortified wine is aged in partially filled wooden barrels according to the Soleras method. Soleras is a system of arranging the barrels on several levels in such a way that the young wine is added to the higher barrels and racked from time to time to the lower level, blending with the wine already present. So to the bottom there is the oldest wine ready for bottling. Each barrel contains a mix of wines from multiple vintages and the further you go down and the longer the wines are aged. Sherry Cream Canasta is aged for at least 6 years.
