Alto Adige Cabernet Sauvignon Quintessenz Riserva 2019
The Quintessenz line represents the pinnacle of the extensive production of the Kaltern winery. Cabernet Sauvignon is one of the five grape varieties that give life to the five monovarietal labels that carry the title of “Quintessenz”. The grapes are harvested in the area identified as the most suitable for this vine variety among the total 500 hectares of vineyards managed by the cooperative members. In particular, the grapes for this Cabernet come from a gently sloping vineyard at the bottom of the valley between 220 and 260 meters above sea level. It is a vineyard with a particularly warm microclimate and very pebbly soil with limestone and clay. In these conditions, Cabernet Sauvignon ripens perfectly and develops fruity and elegant flavors. The ripening of the phenols is also perfect and the result is a structured, refined and long-lived wine. A wine of great class.
The harvest is manual. The de-stemmed grapes ferment in oak barrels with a total maceration of 4 weeks. After racking, the wine is transferred to French oak barriques, half of which are new. The wine undergoes malolactic fermentation in barriques and ages for 18 months.
