Sassicaia laid the foundations for the birth of the Bolgheri appellation and the renewal of all the wine making in Tuscany. Even today it is one of the greatest expressions of Italian wine in the world. It was born as a private wine of Mario Incisa della Rocchetta in the 40s of the last century and it was put on the market only with the 1968 harvest. The idea of planting Cabernet in Bolgheri was brilliant, creating an absolute champion among Italian wines and inspiring a new course for Tuscan and Italian wine. In addition to proving the success of Tuscan wines worldwide, Sassicaia is a wine of extraordinary finesse, elegant more than powerful. Its qualities are the ability to perfectly interpret the Bolgheri territory, to be fascinating without being muscular, to be really long-lived.
The grapes come from several vineyards within the estate: some along the avenue of cypresses and some on the hills at over 300 meters above sea level. The harvest is manual, starts with Cabernet franc and continues with Cabernet sauvignon. After a selection, grapes are destemmed and alcoholic fermentation takes place in steel vat with spontaneous yeasts. Skin contact does not exceed 2 weeks with frequent pumping over and délastage. The malolactic fermentation is also carried out in steel. Sassicaia ages for two years in French oak barriques, of which a third are new every year, keeping the wines separated by vine and vineyard of origin. the final blend is created only at the end of the wood aging.
