The company was founded by the Florentine pastry chef Giulio Cocchi in 1891. After moving to Asti he became passionate about the aromatization of Moscato wines with herbs and spices. Initially its production included sweet sparkling wines and flavored wines such as Vermouth and Barolo Chinato, but also the American Aperitif, thanks to which it became famous around the world. To make his products known, Giulio Cocchi had the brilliant idea of ​​opening exclusive retail outlets, in which to taste his wines. Even today in Asti we can find the "Cocchi Bar".

Cocchi products soon gained international success. Today the business is in the hands of the Bava family, which works with the same spirit of the origins as regards flavored wines and has expanded the production also with traditional Piedmontese still wines and sparkling wines of excellence such as Alta Langa DOCG. The Bava family owns vineyards in Monferrato and in the Langhe cultivated with local varieties. The production range is wide. Each year it produces about 300,000 bottles.
