The brut Toto Corde di Cocchi sparkling wine is the heir to a long Piedmontese tradition in the production of quality sparkling wines. Although the Alta Langa DOCG has only existed for about ten years, in Piedmont for over a century, quality sparkling wines have been made with the method of refermentation in the bottle as in Champagne. Even the grapes of the Alta Langa are the same as Champagne, or the noblest: Pinot Noir and Chardonnay. Toto Corde is based on the black grape Pinot Noir, which gives structure and solidity to the wine, while the minority share of Chardonnay gives a touch of elegance to the scent and sip. The grapes are harvested from vineyards with limestone soil in the highest hills of the Langhe.
The grapes are pressed in whole bunches and the free-run must ferments in stainless steel vats at a controlled temperature for the creation of the base wines. After the composition of the cuvée, the second fermentation takes place in the bottle according to the classic method and the sparkling wine matures on the lees for 4 years.
