Red Valpolicella is a traditional wine produced in the hills north of Verona and is the simplest and most immediate expression of the region's wines which also include Amarone and Recioto. In fact it is produced with the same grapes: Corvina and Rondinella. In the case of the red wine Valpolicella Corte Giara, the grapes are vinified fresh, without drying and with no wood-aging in order to convey liveliness and freshness. Like all the wines of the Corte Giara line, it is designed for daily consumption with traditional cuisine.
The harvest is manual. The grapes are de-stemmed and pressed to ferment with the skins in stainless steel vats at a controlled temperature with daily pumping over for 10 days. After racking, the wine undergoes malolactic fermentation and ages for only 3 months in steel before being bottled.
