Puiatti seeks the aromatic essence of Gewürtraminer in a dry, fresh and lean wine.
“Traminer aromatico” is the Italian translation of the grape variety commonly know with the German name Gewürztraminer. It is an aromatic variety and has the characteristic of accumulating a lot of sugars at the expense of acidity. Puiatti's interpretation of this grape seeks to express its aroma without exceeding the structure and retaining acidity. His project is favored by the alluvial soil of the gravel-rich vineyards and by the temperature variations that occur on summer days. The result is a bone-dry, fresh wine with the typical smell of the grape.
Grapes are harvested by hand in the first 10 days of September. They are immediately pressed and only the free-run must ferments in steel vats at a controlled temperature. The wine remains in contact with the yeasts for four months. Malolactic fermentation is not carried out.
