Volpolo is a Bolgheri Rosso DOC from a small artisan winery, which has focused on just two labels. Volpolo is the most produced wine by Podere Sapaio, with grapes from various vineyards within the Bolgheri appellation. The blend il based on a very high percentage of Cabernet Sauvignon, in perfect Bolgheri style, with the idea of making a full body wine, that can age over the years.
The grapes are harvested by hand. Alcoholic fermentation takes place in steel vats at a controlled temperature with a long maceration in contact with the skins. The wine ages for 14 months in French oak barriques and tonneau.
Features
Colour: deep ruby red.
perfume: myrtle, blackberry, black currant, black pepper, coffee.
Taste: hot and supple with ripe tannins, refreshing acidity.
Abbinamenti
It can age for some years. It is very versatile in food pairing; we recommend it with grilled pork steak.
Recommended with: grilled red meat, roasts, red meat stew, hard cheese, meat sauce pasta.
