Mora Mora Malvasia Nera is a red wine produced by Cantine Paolo Leo. Its uniqueness lies in the use of Malvasia Nera grapes, an indigenous Salento variety that gives the wine an intense, fruity flavour.
Malvasia Nera is an ancient vine whose origins are lost in the mists of time. Its presence in Salento has been witnessed for centuries, and today it represents one of the region's oenological excellences. Its unmistakable aromaticity lends a particularly fine touch in blends of note. Harvesting is carried out in the early hours of the morning, in the cooler hours of the day. After the harvest, the grapes are destemmed and the crushed grapes ferment in stainless steel at a controlled temperature of 22-24°C for 8-10 days. The must undergoes several pumpovers and delestages, which provide a technological extraction of colour and tannins. The wine is then drawn off in a soft press. After the first racking, again in stainless steel, malolactic fermentation takes place and then maturation is for 3 months in second and third passage French oak barriques.
