Chablis is a French town and wine area that is part of Burgundy. In reality, the Chablis vineyards are 100 km further north from the main Burgundy vineyards and are closer to Sancerre and to the south of Champagne. The climate is also cooler than in the rest of Burgundy and determines dry white wines with a particularly fresh and mineral character.
The Chardonnay vineyards of Domaine Brocard lie on calcareous soils rich in fossil shells, which give the wines a characteristic character of freshness and lightness.
The alcoholic fermentation takes place in stainless steel with indigenous yeasts. The wine remains in steel vats for 6-8 months and also carries out malolactic fermentation.
