Franciacorta Brut
Non-vintage Franciacorta Brut is the house's entry wine, the one that represents it more than any other. It is a traditional method sparkling wine based on Chardonnay but also with the presence of Pinot noir and Pinot blanc. In Contadi Castaldi's philosophy it must be a lively and immediate fizzy, the result of more than twenty years of experience. After the soft pressing of the whole bunches, the must is clarified by cold decantation, after which it ferments in steel vats at a controlled temperature with selected yeasts. Some of the base wines age in barrique for 7 months and also carry out malolactic fermentation. After the second fermentation in the bottle according to the traditional method, the sparkling wine ages on the lees in the bottle for two years.
