Amarone della Valpolicella Cavolo 2019
Cavolo is the name of the vineyard from which this Amarone comes. It is located in the Valpantena, 130 m above sea level in the midst of olive groves. The soil is pebbly and not very fertile, so the vine naturally produces low yield in favor of quality. Although the vineyard faces east, it enjoys a warm microclimate due to the low altitude.
To produce Amarone della Valpolicella Cavolo, the ripest and most loose bunches are chosen; they are dried in boxes indoors for at least 90 days. During the fermentation of the dried grapes with the skins, two pumpovers are carried out per day. Finally, the wine ages for 2 years in barrique and for 2 years in large barrels.
