Teodor Bianco is a typical white wine from the Slovenian Collio, it is produced with Ribolla giallo (locally called Rebula), Friulano (internationally called Sauvignonasse) and Pinot grigio. The wine is made with maceration on the skins and with aging in wood. This makes it particularly rich and structured, to be enjoyed with savory dishes. It reflects the true local tradition and above all expresses the power of a unique territory, that of the Gorizia Collio, determined by characteristic climatic conditions and terrain. The soil is in fact a former seabed, consisting of a stratification of marl and compact clay with limestone, the climate is affected by the mild influence of the Adriatic Sea which is only 20 km away. Simčič's production philosophy tends to work in the most natural way possible, with an organic approach in the vineyards and with minimal intervention in the cellar. The vineyards extend on both sides of the border between Italy and Slovenia. Being the winery in Slovenian territory, the wine is labeled as Brda (which in Italian means Collio).
All fermentations take place with spontaneous yeasts. The Ribolla Gialla grapes ferment in contact with the skins for 8 days in wooden vats. Friulano and Pinot Grigio, on the other hand, ferment in steel vats and contact with the skins occurs only in the first 2 days. The wines age for almost two years in wooden barrels: the Ribolla gialla in large 30-hectolitre barrels and the other wines in small 500-liter barrels.
