Loved for its roundness and fruity intensity, Pinot Grigio is a grape widely cultivated in Italy throughout the north east. The high and rocky soil of the Isarco Valley, however, makes the sip vibrant with a unique tension of freshness. The Pinot Grigio plants are grown on loose, very gravelly and sandy soils, between 520 and 690 meters above sea level with predominantly south-eastern exposures. They are steeply sloping vineyards with limited yields.
The harvest takes place at the end of September. A gentle pressure of the grapes extracts the must which is clarified by natural cold decanting. Alcoholic fermentation takes place in low temperature refrigerated stainless steel vats. The wine does not undergo malolactic fermentation and matures for a few months in contact with the fine lees in the same fermentation vessels.
