Sauvignon blanc is a French grape variety spread all over the world and represents the style of fresh white wines with vaguely vegetal notes. In reality, its perfume is always intense and penetrating, but it can take on a different personality based on the soil, climate and grape yields. It is almost a chameleon from this point of view. In Alto Adige it has been present for a century like other international vine varieties but not very widespread in the Isarco Valley, where it is grown only in the lower valley between 450 and 750 meters above sea level on gravelly soil with porphyry of volcanic origin.
It is harvested in mid-September. The grapes are pressed and the free-run must is clarified by natural cold decanting. Then it ferments in stainless steel vats at a controlled temperature. The wine does not undergo malolactic fermentation and ages on the fine lees for a few months in steel.

It can be served as an aperitif, but an ideal pairing is asparagus risotto.
Recommended with: sushi and raw fish, vegetarian dishes, pizza, shellifish, crab and lobster, fish.
