The winery was founded in 1843 in Illasi by Carlo Santi. In 1930 Attilio Gino Santi was among the first in Italy to implement a modern sparkling wine system; and perfected a production method that will lead him to become a point of reference for the Italian schools of oenology at the time. In 1974 the Santi winery became part of the Gruppo Italiano Vini group, but before then, mainly thanks to Guido Santi, the company's specialization in the field of quality products was completed
