The Piffer sparkling wine producer was founded a few years ago in Lavis, at the entrance to the Val di Cembra in Trentino and is family-run. The family is rooted in the Tentino area and Vito Piffer has over 30 years of experience in sparkling wine making. From less than two hectares of vineyards, Piffer is able to produce 3 different labels of traditional method sparkling wines.
The Val di Cembra is particularly suited for the cultivation of grapes to be used as sparkling wine for various reasons. First of all, the vineyards reach high altitudes, up to 800 meters above sea level and enjoy a cool climate. Secondly, the soils of the Val di Cembra are rich in porphyry and minerals, which favor the acidity and aromatic definition of the wines.
The three sparkling wines that Piffer produces are in fact distinguished on the basis of the origin of the grapes, or the different nature of the soil. In addition to the porphyry vineyards in Val di Cembra, in fact, Piffer also has vineyards on soils of morainic origin, therefore more stony and loose in the Adige Valley.
