Conte Vistarino's Saint Valier comes from vineyards on the Rocca de' Giorgi estate in the province of Pavia. The name of the wine derives from the estate's place name, which is rooted in the original clone of Saint Vallier in Provence.
It is produced entirely from Pinot Noir grapes, selected and harvested solely by hand into 20 kg crates. The grapes first stay overnight in the refrigerator at 10°C. In the morning, white vinification takes place. The grapes are pressed to obtain the first-pressing must, which is fermented in steel at a controlled temperature, where it remains on the fine lees for approx. 4 months, until bottling.
