The Sabazio red wine is a Sangiovese typical of the Montepulciano area, in the Val d’Orcia in the province of Siena, vinified without the use of wooden vessels; therefore it maintains a lively character with aromas of fresh fruit and a round and immediate taste. In Montepulciano Sangiovese is called Prugnolo gentile, it is a clone that has adapted to this area of sandy and clayey soils. The Rosso di Montepulciano appellation, in fact, is the young and immediate version compared to the more evolved and pretentious Vino Nobile di Montepulciano, but the grapes and the production area are exactly the same. The use of Merlot does nothing but accentuate the intensity of the fruity aromas and make the wine even more rounded on the palate.
The de-stemmed and crushed grapes ferment in steel vats at a controlled temperature. After racking, the wine undergoes malolactic fermentation and ages for a few months in steel vats before being bottled.
