Ottella’s RosesRoses rosé wine is produced from a blend of red grapes grown in the village of Peschiera del Garda on the hills furthest from the lake shore. Corvina is the typical vine variety of Valplicella and Bardolino wines, it has fine aromas and elegant tannins. Lagrein, native to the province of Bolzano, brings a lot of color and intense fruity aromas. Rondinella, less and less cultivated in Valpolicella, gives structure and flavor but low tannins. Ottella adopts the foresight and experience of rosé production that is typical of this area, where the rosé wine is called "chiaretto".
The grapes are hand-picked at the end of September using small 4 kg boxes. The berries are separated with a modern destemmer by oscillation, without violent breaking of the skin. Maceration with the skins lasts only 10/12 hours; a delicate pressing extracts a light colored must which ferments without skins in stainless steel vats at low temperature. The wine does not carry out malolactic fermentation.
