Puiatti’s Sauvignon comes from vineyards in the municipality of Romans d’Isonzo in the locality of Zuccole. The soils are alluvial rich in river pebbles and covered with red clay. The climate is Mediterranean with significant temperature variations between night and day that increase the aromas of the grapes.
The harvest takes place in 3 times to better capture the various characteristics of Sauvignon blanc: acidity, aromas, structure. After pressing, the free-run must ferments in steel vats at a low temperature. The wine ages in steel vat on the fine lees for a few months without carrying out the malolactic fermentation.
