Chardonnay is a white grape variety widespread throughout the world, capable of expressing different nuances depending on the terroir in which it is grown. In Salento, the warm and sunny climate gives the wine a particular richness of fruity aromas. Harvesting takes place in the early morning hours around the first ten days of August. Attention is always paid to safeguarding the freshness and typicality of the fruit. After the harvest, the grapes are destemmed and the crushed grapes undergo a short cold maceration. After a soft pressing of the marc, the must ferments at a controlled temperature of 15° C for about 10 days.
