The Negroamaro of the Cantalupi estate is a young and fruity red wine produced with grapes grown in the township of Salice Salentino in the province of Lecce. The basically calcareous soils favor the aromatic definition of the grapes. The wine has a round and easy-to-drink character, while having a high level of intensity on the palate. It is very versatile in food pairings and drinking occasions; it can pair with a platter of sausages as well as grilled meat. It goes well with cheeses and, if desired, it can also be sipped simply in conversation.
The grapes are completely destemmed and fermented in stainless steel vats at a controlled temperature not exceeding 25 ° C with a maceration of 8 days. This allows to preserve the freshness of the primary grape aromas. The wine also carries out malolactic fermentation and ages for a few months in concrete tanks.
