Lambrusco Terre Verdiane Amabile Ceci is a sparkling red wine produced by the Ceci winery, located in the heart of the Emilia-Romagna region of Italy. The grapes are harvested by hand when perfectly ripe, usually between the end of September and the beginning of October. The careful selection of the bunches guarantees the quality of the grapes and their suitability for vinification. The grapes are gently pressed to extract the must, separating it from the stalks. The resulting must is left in contact with the skins for a variable period of time to extract colour, tannins and aromas, then fermented in temperature-controlled stainless steel tanks to preserve the wine's freshness and aromas. The skins are separated from the wine and gently pressed to extract the remaining must. As it is a sparkling wine, it undergoes a second fermentation to obtain the characteristic bubbles. Foaming takes place in temperature-controlled stainless steel autoclaves using the Charmat method, then it is aged for a short period in stainless steel tanks to stabilise its characteristics. Subsequently, the wine is filtered and bottled using modern techniques to preserve its freshness and aromas.
