Malvasia istriana is a native vine variety of Friuli, also widespread in Croatia, especially in Istria. Its success is due to its aromatic scent and balanced taste, which is enhanced in the lean soils of the Friulian coastal plain. The vineyards have very draining alluvial soils with little clay and enjoy a temperate climate thanks to the proximity of the Adriatic Sea and the mountains to the north that hold back the coldest currents. Malvasia istriana is suited to different types of wine making; in this case the white wine Friuli Malvasia by the Cantina Produttori Cormòns focuses on varietal purity, with medium structure and easy drinkability.
The grapes are harvested in late September. They are de-stemmed and subjected to a cold maceration to extract the maximum of the flavor compounds from the skins. They are then gently pressed and the liquid must ferments without skins at a controlled temperature in stainless steel vats. The wine ages in steel in contact with the fine lees for about 6 months.
