Skin maceration adds a vinous structure to the traditional fruity content of Pinot grigio.
Simčič’s Pinot Grigio is a great Collio wine with an important structure, produced with a long maceration with the skins as if it were a red wine. It has the fruity aromaticity and fullness of the grape variety with an added bite due to the richness of phenols. Therefore, it lends itself very well to pairing with important dishes. It comes from the Ronc di Zegla vineyard, 250 meters above sea level, in the Italian part of the Simčič vineyards. These are very old vines, which are over 40 years old; the plants have their roots in a very suitable soil, the so-called ponca, that is a stratification of marl and compact clays with limestone.
The grapes are fermented in conical wooden vats with 8-days skin contact. After which the wine is pressed to separate the liquid part which ages in large oak barrels for one year.
