Refreshing and full-bodied Chardonnay, resulting from a maceration on the skins and a long wood-aging.
The Chardonnay Selezione by Simčič winery is a wine with a bold structure, produced with the best Chardonnay grapes from the various owned vineyards and vinified with prolonged aging in wood. The wine expresses the power of the Collio region, whose soil is a former seabed, rich in mineral elements. In particular, the soil is a stratification of compact clay and sandstone, contains limestone and is extremely draining. In addition, the Collio enjoys the influence of the mild air and the brightness coming from the nearby Adriatic Sea. The wine has a particular richness in phenols, as it is produced with a maceration of white grapes.
The grapes are harvested by hand and ferment in contact with the skins for 4 days in truncated conical oak vats. Fermentation takes place with indigenous yeasts only. The grapes are then pressed and the wine ages for 15 months in large oak barrels and for a further 6 months in 500-liter tonneau.
