The wine Caccia al Palazzo by Tenuta di Vaira is a Bolgheri Rosso DOC, produced with Cabernet and Merlot, the grape varieties at the basis of the great wines of the Tuscan coast. It is a versatile medium-bodied wine, to be drunk young with a balanced and round taste and intense aromas, especially fruity, with the characteristic spicy and balsamic nuances of this appellation. In Bolgheri the grapes ripen benefiting from a Mediterranean climate, cooled at night by the breezes that are always present on the vineyards.
The harvest is separated by variety and vinification is also separate. Alcoholic fermentation takes place in stainless steel vats at a controlled temperature with maceration on the skins. Subsequently the wines age in French barriques for 10 months and finally the final blend is created.
