The Diplomático distillery (Destilerías Unidas S. A.) is located at the foot of the Andes in Venezuela, where the purest waters flow to produce the best Rums. It was founded in 1959 and today it is an independent family-run company; they care for every step of production in an artisanal way, from the supply of raw materials to bottling.
The distillery selects the best varieties of sugar cane; with molasses it produces the lightest Rums, with juice it produces complex Rums. Fermentation can last from a few hours to 2 days. Light Rums are obtained with continuous column distillation, while for the most important Rums the distillation is discontinuous with different types of stills.
Aging takes place in barrels previously used for bourbon and malt whiskey, including Pedro Ximénez and Oloroso sherry. Finally, the art of blending is a fundamental moment for creating Rum with a complex personality.
