The Mamoiada area has a great vocation for viticulture. The vineyard is 750 metres above sea level, with a spurred cordon training system. Sea breezes and great height allow for healthy, ripe grapes ideal for a Cannonau with spirit and dynamism.
After manual harvesting at the end of September, the wine undergoes spontaneous fermentation with indigenous yeasts and maceration on the skins for 15 days. It then matures in large 50 hl oak casks.
