Sannio Aglianico DOC Fidelis 2019

Fidelis Aglianico is one of the winery's flagship wines. It is a full-bodied, intense red wine made from pure Aglianico del Taburno grapes. This wine is characterised by its intense ruby red colour, complex aromas of ripe red fruit, spices and balsamic notes, and a rich, persistent flavour. The grapes are harvested by hand or mechanically, depending on the characteristics of the vineyard and the producer's choices. The grapes are crushed to extract the must, the sugary juice that will give rise to the wine. Destemming consists of separating the stems (the woody part of the bunch) from the berries. The must obtained is left in contact with the grape skins for a variable period, depending on the type of wine to be made. Maceration is essential to extract colour, tannins and aromas from the skins, then it is transferred to steel tanks or wooden barrels, where alcoholic fermentation takes place. The yeasts transform the sugars into alcohol and carbon dioxide. The wine is left to mature for a variable period in wooden barrels or steel tanks. Ageing helps to develop the aromatic complexity and structure of the wine.
