Paolo Leo's Negroamaro varietal represents an authentic expression of this princely Salento grape variety. Paolo Leo is dedicated to enhancing the unique characteristics of Negroamaro, offering a wine that reflects its territorial identity. Vinification in purity allows the aromatic notes and character of the vine to be fully appreciated. Manual harvesting is carried out in the early hours of the morning, preserving freshness and aromaticity. After the harvest, the grapes are destemmed and the crushed grapes are fermented in steel at a controlled temperature of 22-24°C for 8-10 days. Fermentation is controlled so that the daily pumping over can express the best typicality of the grape variety. It is then refined for 5 months in steel.
